Rich & Tasty Twice Baked Potato Casserole!


  • 4 lbs potatoes
  • 4 cloves fresh garlic
  • 1/4 cup butter
  • 1 cup sour cream
  • 4 oz cream cheese
  • 1/2 cup milk
  • 2 cups shredded cheddar cheese
  • 2 green onion, thinly sliced
  • 10 slices cooked bacon
  • salt & pepper to taste

  • 2 slices cooked bacon
  • 1 cup shredded cheddar cheese


  1. Preheat oven to 375°
  2. Wash potatoes. Peel 2/3 of skin off, and cut into large chunks. Slice garlic cloves into thin strips. Boil together until potatoes are tender.
  3. Meanwhile, cook bacon until desired crispiness. Once, cooked and cooled, crumble bacon into small pieces (remember to leave 2 slices out for topping).bacon
  4. Drain potatoes and garlic.  Mash together potatoes, garlic and remaining ingredients until you reach desired consistency.tbp-mash
  5. Pour mash into 9×13 glass baking dish.
  6. Add toppings evenly over mash, in this order:
    1. Cheese
    2. Remaining bacon, crumbled
    3. Green onions
  7. Bake 30-35 minutes
